These crispy potato skins are fully loaded of flavors: kim chi toppings, melted cheese and sour cream. This fancy appetizer is easy, impressive for any occasions.
When I think of a potatoes recipe, the only meal that comes to mind was beef steak with potatoes, a fancy dish back home. So when potato skins were introduced to me, my first thought was “why would you want to eat the skins and waste the stuff inside the potatoes”. It all got me started when I ordered my sampler appetizer which included potato skins from TGIFridays.
Ahh these potato skins are everything I’ve ever wanted when ordering appetizer. Buttery and soft inside, crispy outside with tangy kim chi stuffing, baked to perfection.
You’ll love these potato skins with kim-chi because they’re quick and easy to make, they’re sweet & tangy because of the kim chi stuffing. And they’re totally delicious. Even Alexis approved 😉

Kim-Chi Potato Skins
- 4 russet potatoes (washed and dried)
- 2 tablespoons salted butter (melted)
- 2 jalapenos (diced)
- 1 cup kim chi
- 1/4 cup sour cream
- 1/2 teaspoon each salt, pepper, garlic powder
- 1/2 cup shredded cheddar cheese
Preheat oven to 400 degrees and set the rack in the middle. Line parchment paper on baking tray.
Using a fork, punch the each potato several times. Place the potatoes on baking tray and bake until the skins are crispy and you can easily insert with a fork. Transfer the baking tray and let cool for about 10 minutes.
Slice each potato half lengthwise. Scoop out the flesh, reserve it for another use. I use the flesh and add some butter and milk to make mash potato.
Brush the melted butter on the inside of potatoes. Sprinkles with salt, pepper & garlic powder. Turn the potatoes over and brush melted butter on the other side.
Set the oven to broil, return the potatoes to the oven, broil it skins side up for 2 minutes. After 2 minutes, sprinkles cheese and broil for an additional minute. until cheese is melted.
Remove from the oven. Fill each skins with kim chi, more cheese, jalapenos, green onion and top it off with sour cream. Serve immediately.
