Week night dinner at my busy household = quick, easy but tasty dinner. Because I only got 1hr to prepare dinner and a million things to do around the house, easy meals is almost always the case.
Spicy Asian noodle salad it is, for today and for the rest of my summer. Are you in?
I’m a die-hard noodle fan if you haven’t noticed already. Gimme all the vermicelli, soba noodles, ramen, pasta and I’ll be a happy girl! I’d take noodles over my beloved avocado any day. (Although it’s really hard to chose ;))
The mix of sweet, sour, spicy and tangy dressing in this salad will definitely waken up your palate. Oh did I mention the vibrant, crunchy fruits & vegetable: red peppers, edamame, mandarin oranges, and nectarines. I’d eat salad for lunch every day if they’re colorful and gorgeous looking like this.
This little salad is simple and versatile because you can pretty much add any fruits, vegetables you have on hand. It’s a perfect light lunch or you can even serve it with protein. Think grilled chicken, grilled shrimps or salmon. The possibilities are endless.

Summer Fruit Soba Noodle Salad
A refreshing soba noodle salad with fresh fruits and vegetables: edamame, red peppers, nectarine and mandarin oranges. Healthy and satisfying!
For the spicy dressing:
- 2 tablespoons apple vinegar
- 2 1/2 tablespoons less sodium soy sauce
- 1 tablespoon minced garlic (I always add a little more)
- 1/2 tablespoon chili garlic
- 1 tablespoon sesame oil
- 1/2 teaspoon sriracha sauce more to taste
- 2 tablespoons green onion
- 1/2 tablespoon lime juice
- 1/2 tablespoon sugar
For the soba noodle salad:
- 6.5 oz buckwheat noodles (2 bunch)
- 1 cup mandarin oranges
- 1 nectarine (thinly sliced)
- 1 cup edamame (boiled)
- 1 red pepper (thinly sliced)
- 2 teaspoons toasted sesame seeds for garnish
In a pot of boiling water, cook the noodles according to package instruction, about 5 minutes. Drain under cold water and set aside.
At the same time, in a small saucepan, boil the edamame. Drain and set aside.
In a bowl, add all dressing ingredients. Whisk until sauce dissolved.
Place soba noodles, red pepper, edamame, mandarin oranges, nectarine in a large mixing bowl. Pour dressing over soba noodles salad, add sesame seeds. Toss to combine.
Serve cold or at room temperature. Even better next day, enjoy!
